This year, it looks like Ibiza's idyllic, pastoral edges are set to hold the same mystical pull over us as its hedonistic excesses thanks to a raft of new accomodation openings in its hazy, rural wilds.

The island has been digging around in the dirt for a while, thanks to a younger generation of Ibicencos returning to their family fincas in search of the good life. But it's not just the White Isle ploughing new pathways in the soil. Across the Balearic Islands, bleary-eyed night owls in search of a slower pace of life are heading into the bucolic interiors of these beautiful isles to find farm stays and rural escapes for the summer season. When you're done with the dancing, and prepped to laze and feast in an idyllic farmstead, here's where to head.

The effusive scent of lavender swirls around Casa Maca, making this finca a true feast for the senses. Set in the Can Palau hilltops, the low-fi farmhouse has been lovingly refurbished into a verdant White Isle stay brimming with country charm. Suites nod to the classic Ibicencan style, being airy, rustic and infused with Balearic spirit. Beamed ceilings, wood furnishings and warm, auburn accents pop against whitewashed walls. The surrounding gardens are planted with native flora, creating a botanical backdrop for the in-house restaurant's evening service. Take a seat at the al fresco grill house to sip flora-infused cocktails and dine on farm-grown dishes such as grilled aubergine doused in a white miso emulsion, and grilled native prawns. Dusk arrives with a chilled-out soundtrack of live music and DJ sets, offering a nugget of old-school Ibiza spirit.

Away from the shimmering exuberance of Ibiza's discotecas, whitewashed finca Can Martí offers a jute-clad escape into the pine-filled valleys of Ibiza's northern interior. The atmosphere is Elysian at this six-key stay surrounded by 42 acres of groves and farmland, the only aural interference coming from the soothing crackle of the ever-present cicadas. Add a natural, freshwater pool (frogs included), weekly communal farm dinners and evening meals pulled fresh from the ochre soils of the permacultura garden, plus a visit to the onsite hammam, and we're ready to log-off and join the staff permanently. A few rooms come with their own kitchen, so stock up at the finca's shop on eggs, local cheeses and organic wine - or take it easy and head out to explore the White Isle's eclectic restaurant offering.

Lying in the verdant foothills of the Serra de Tramuntana mountains, this laid-back finca distils the essence of the Mallorcan countryside into a tranquil stay. The centuries-old farmstead has been transformed into a bucolic getaway of 25 light-filled suites, all scattered across the honey-hued main house and a handful of stand-alone buildings within 40 hectares of citrus groves. The property retains its agricultural character, offering a kitchen garden-fuelled menu at the in-house Jacaranda; green-thumbed guests should talk to chef Oscar Velasco and his team to request a cooking demonstration of their farm-to-fork style, taking you from their verdant veg patch to the sun-drenched restaurant terrace. Tucked between the forested folds of the Serra de Tramuntana mountains, the 25-key LJs Ratxó promises a fugu-inspired stay just west of Palma. You'll need your Free People linen co-ord for this eco-focused finca; it's a poetic pastoral vision of clean living, complete with collected rainwater and reclaimed wood furnishings. After a breakfast of homemade jams, honey collected from the on-site hives, and locally sourced cheese and charcuterie, you'll be recharging inner energies using ancestral practices, and slinking between golden-stone medieval architecture and sylvan surrounds to find the all-natural spa, ready for a muscle-calming neck rub using essential oils infused with mountain flora. The kitchen has a "zero-kilometre" approach to food sourcing, with ingredients plucked from the kitchen garden. Sip a Mallorcan mojito at the Ginebró bar, then feast on the fruits of the earth, seated at the sun-drenched terrace restaurant.

Picking our favourite farm-to-fork stays in Menorca is a tricky business: plenty of the bougainvillea-ruffed farmhouses and bucolic country palaces on the tranquil Balearic isle have won our hearts with their first-class feasting. If we had to pick a favourite, it would be this green-shuttered mansion tucked behind an ancient olive grove in the southeastern corner of the island. Owned by the Mercadal family since the 14th century, food has always been at the heart of this sprawling, neoclassical property - and the restaurant continues to plate up recipes from the family cookbook, made with locally sourced produce. Wander the lightly trodden footpaths through rambunctious gardens populated by nodding wild flowers and emerald pines, dip into the lawn-flanked pool, then bed down in one of 22 stone-spined rooms and suites. Our favourite is the cosy Joana Caules Pons - a dinky, warmly lit, whitewashed space in the palace proper that once housed the estate's kitchen.

One of Menorca's original rural hotels, Biniarroca is run by two English expats - a painter and a former fashion designer. The bougainvillea-draped stay lived a previous life as a cattle-raising farm, before it was transformed into its current iteration as an Arcadian summer retreat. The owners have retained the property's agricultural origins with a restaurant dedicated to field-to-plate fare, and with a slow, seasonally paced cadence evident in the day-to-day living. Individually designed bedrooms are reached via a cool, pale, warren-like corridor; outside, there's a colonnaded swimming pool and lush, rambling gardens, all inspired by the fragrant romance of the Italian Riviera. You'll find the whitewashed fisherman's hamlet of Binibeca a stone's throw from your pastoral refuge, and, a little further afield, a handful of quiet beaches.

Calling the buffed, toned and tanned: overlooking the sea, Torralbenc is a former farm reimagined as a chic agritourism getaway by villa-visionary Antonio Esteva. Gone is the rustic agricultural outpost; in its place, an airy, elegant Eden, with aesthetically enticing rooms (think cream curves and soft, billowing linens) that all have private plunge pools. It's a favourite choice for athletic folk hankering after days of horse riding along the shore, diving into the waves and enjoying the gentle kiss of Menorcan rays on sun-creamed backs. Perched atop a hillock overlooking contoured vineyards and with views across to the Med, the restaurant's menu has been developed in collaboration with Michelin-starred chef Gorka Txapartegi, blending Basque flavours with produce and wine fresh from the property. Linger over dishes of prawn, Iberian pork and artichoke rice, and charcoal-grilled octopus over kale in the golden evening light.
