As we step into 2025, we’re feeling inspired by the spirit of new beginnings and, in celebration of that feeling, are asking our community of well-journeyed travellers about their plans for the year ahead.

Satika Rapimsamrong, better known as Shit Mendy Cooks in the culinary and Instagram worlds, and Mendy Indigo when behind the DJ decks, has made a name for herself as a Thai chef, food ambassador and cultural explorer. Currently embracing a slower pace of life on Koh Phangan, she is not only focused on her family and new projects, but is also ready to share her love for Thai cuisine with the world. On her plans for 2025, she opens up about the year ahead, from the launch of her dream culinary space and an international DJ series to food-focused travels across the globe. We dive into her vision for 2025, the destinations she’s excited to explore, and find out how she’ll be merging creativity, food and family in what promises to be a truly meaningful year.

How are you celebrating the start of 2025?

This year will be a very chill and meaningful one. I’ll be home on Koh Phangan, celebrating with my family. It’s a slower-paced start to the year, filled with cooking, good food and quality family time. We’re planning to prepare some special holiday meals together – it’s my way of reconnecting with the people I love the most and considering the year ahead.

I am also looking forward to starting the new year with my new store, which has just opened. It’s called Sprout, and the concept is all about handcrafted Thai products that I produce or curate from artisans across Thailand.

Let’s talk travel. Are any destinations calling your name this year?

Europe – Germany, France and Spain – are at the top of my list for visiting family and friends. Japan is also calling me, especially as my husband and I are finally catching up on our much-anticipated honeymoon. I’m so excited to dive into Japan’s food and culture. I’ll also be traveling for DJ gigs across Asia, though the destinations aren’t confirmed yet. There’s something magical about combining work, exploration and food discovery – it’s when I feel most alive.

Any exciting new openings you’re looking forward to experiencing in 2025?

I’m beyond excited to be opening Sprout Kitchen, my new open kitchen space on Koh Phangan. It’s a dream come true – hosting private dinners, small cooking classes and creative workshops where I can share my love for food in a cosy, welcoming space.

Any food-focused destinations you think will be big in 2025?

Japan is unmatched. It’s always at the forefront of food exploration, with something new to discover on every visit. Smaller gems like San Sebastián in Spain are also gaining momentum, especially as food lovers continue to share its magic online. I’m also seeing a growing curiosity for regional cuisines from Vietnam and Mexico, which I think will really take off globally this year.

What destination is your community talking about right now?

Thailand is timeless – it’s always on the radar. Travellers seem to keep coming back, especially for the islands, where you can experience everything from mindfulness retreats to amazing food scenes. Right now, Koh Phangan is buzzing, not just for its legendary parties but for its emerging creative and culinary spaces.

What do you hope to take away from your travels in 2025?

This year is going to be a special one because I’ll be traveling with my newborn for the first time. Every moment will feel like a treasured memory, and I can’t wait to see the world through their fresh eyes. I hope to take away deep connections – to people, food and places – while building beautiful family experiences that I’ll cherish forever.

How is the way we eat changing in 2025?

People are becoming more intentional with food – seeking health-conscious choices while also craving authenticity and tradition. There’s a noticeable shift towards exploring regional cuisines, particularly from Mexico, Vietnam and Japan.

One trend I’ve loved seeing in Thailand is the rise of Khao Soi, a northern Thai dish, which is giving Pad Thai some serious competition on the global stage. There’s also more focus on local, seasonal ingredients and reviving traditional cooking techniques, which is something I’m really passionate about.

What's happening in Thailand in 2025?

Thailand always has something new and vibrant happening, but if you’re visiting Koh Phangan, a private dinner or cooking class with me at Sprout Kitchen is an absolute must! You’ll get to experience authentic dishes, hands-on cooking and a creative, laid-back atmosphere that’s perfect for food lovers looking to connect with Thai culture.

If 2025 were to have a theme for you, what would it be?

New beginnings. This is a year of fresh starts and big milestones. I’ll be launching new projects like Sprout Kitchen, relaunching some older ideas, and settling into a new home. It’s going to be a year of growth, creativity and meaningful moments – both personally and professionally.

Anything exciting on the horizon for you?

I’m determined to finally finish my cookbook – it’s been a long time in the making, and 2025 feels like the perfect moment to bring it to life. Expect lots of new recipes, collaborations and food-filled adventures coming your way.

On the music side, I’m launching Dark Matters, an event series bringing international DJs to Thailand for curated, intimate music experiences. Food, music and community… It's going to be a special year. Details will be dropping soon!
