For cool, inventive cocktails hit up St Pauls Apothek, a pharmacy for an entire century before being turned into a bar – a much better use, if you ask us. It’s still got plenty of old features, while theatrical cocktails include a nuclear daiquiri made with absinthe and lemon-hart overproof rum; a fattie bum bum made with Johnnie Walker Gold Label, port and marshmallow and nettle stout syrup; and the fish house cocktail, based on a 200-year-old cognac and brandy-heavy punch recipe from one of America’s oldest social clubs.

A summertime, weather-dependent beach bar, with the obligatory HAY furniture (this is Denmark after all), by the Aarhus Ø harbour development. Expect barbecue food, cocktails and events such as volleyball tournaments on the sand. Opening hours are determined by the sunshine, but it’s worth the wait for a chilled-out afternoon overlooking the area’s experimental waterside architecture.
