Gastromé

Aarhus, Denmark

This Michelin-starred example of New Nordic cuisine makes the most of produce from the Danish countryside. The nature theme extends to its decor (antlers, branches and wooden furniture abound) as well as the food, with a tasting menu of innovative, thoughtful dishes: a roasted quail is plated up and put back in the forest with the addition of foliage-like crispy reindeer moss and red sorrel on top of deliciously umami chanterelle purée. There’s a clear concept here, with the substance to back it up too.
